Sour Cherry Cordial

In order to make Jori Jayne Emde's recipe for the Queen Julia Jax cocktail featured in Project 258: Making Dinner at Fish & Gameyou have to whip up a batch of this cordial.

Mash the whole fruit up in a jar big enough to hold everything with plenty of room, then put the jar in a water bath at 60 degrees C for an hour with the water deep enough to equal the liquid level inside the jar. Leave the lid a bit loose so evaporatig alcohol can escape. Strain out the solids, separate the cherry pits and return them to the brandy, and return the jar (lid still loose) to the bath, now heated to 75 degress C for 45 minutes. This extracts more of the magic almond flavor that hovers at the core of all stone fruits and softens the alcholoic heat by evaporating a bit more of it; the result ends up about ten proof gentler than the original brandy.
